Ground Turkey Goulash

Ingredients
chopped garlic (to taste)
olive oil
1 pkg ground turkey (20 oz)
1 pkg organic baby bella mushrooms (8 oz)
1 organic green zucchini, cut into 1/2 inch slices
1 organic yellow squash, cut into 1/2 inch slices
1 carton fresh organic baby spinach (5 oz)
1 jar organic tomato sauce

Method
This is so easy to make and you will love the flavor! Saute garlic and olive oil in large frying pan (with high sides) on medium heat. Add ground turkey meat and cook until browned. Add mushrooms (I leave them whole), thickly sliced zucchini and thickly sliced squash. Make sure to get them \"cooked\" a bit before you add handfuls of fresh spinach a little at a time. Once you see the spinach looks like its on it\'s way to being cooked (a bit wilted), add a jar of tomato sauce & stir. Turn down heat to low, cover and bring to bubbly boil.

Serve over rice pasta, brown rice, couscous or with thick toasted cheesy bread or garlic bread. Makes for great leftovers!
