  • 2 eggs
  • 450gr flour (200 Manitoba)
  • a piece of yeast (like a walnut)
  • 70gr butter
  • salt
  • 3 tbsp sugar
  • 3/4 glass of lukewarm water
  • amaretti (bicuits)
mix all ingredients: one egg yalk and one whole egg with sugar, add a pinch of salt, let butter become soft and add it to eggs, pour the yeast and water with their frost on top in the middle of the flour mix with a fork and then flour your hands and knead the soft dough you have made.
Let it raise for 1h and half in a plastic high bucket if you have one

prepare the filling:
boil a handful of raisins for a minute and drain it
the same with almonds and take away their skin rolling them in a napkin
chop them together with peanuts
make the amaretti into crumbles
add half a jar of marmellata, I finished my homemade figs, apples, grapes ones
add some rhum and grappa

rollpin half of the dough into a rectangle, spread half of the filling, roll the dough lenghtwise towards you untill you have a sort of salame. Make it twist like a chiocciola"@" and let it raise for another hour
make the same for the remaining dough and filling

before putting into the oven sprinkle with water and dust with a little granulated sugar
(or brush it with the egg white you did not use in the dough , before dusting with granulated sugar)

put into oven at 140° for an hour

enjoy

I will know tomorrow morning if mine turned out good, but these were what I had to do today with what I had at hand

I treated it as if I was kneading a sweet bread, since I substituted the chimic yeast meant for cakes, I didn't have and solved the problem with baker's yeast
this makes two gubanas like that one in the picture, the size of a plate

Method
