Herb Stuffing

Herb Stuffing

Ingredients
1 cup herbs of choice
3 cups fresh bread crumbs
salt
pepper

Method
Put it all in the blender until well chopped & combined... divide in 2.
Add an egg or some water to bind 1 portion, then stuff your chicken.

We have roast chicken here at least once every 2 weeks...

Sunday is roast day... old fashioned Maybe, but why not

A while ago Jamie started a new section in the forums for getting the most out of food-stuff...

I started a thread on stale bread... we eat loads of bread, and toast, but somehow I end up with all sorts of bits & peices.

I have been drying out stale bread on the bench, then blitzing it in the Kitchen Wizz for a while now, then I freeze it until needed.

Today I pulled a bag out to make stuffing for the Sunday Roast.. thinking of flavours, I went out to cut some herbs...

Rosemary, Oregano, Parsley & Chives.

loads of chives as they have gone a bit mad this spring...

I could not be bothered snipping chives, or chopping herbs in general, I hate chopping rosemary leaves, yes Im a bit lazy at times... Sunday, especially, is supposed to be a day of rest...

So i thought I would put the whole lot in the blender.. ok, it was a start... but they didnt chop fine enough.
SO I added the crumbs, all of them...

Way to much stuffing mix.. so I bagged half & its sitting there in the freezer ready for the next chicken...

The remainder I bound with a little water (use an egg if you prefer) and stuffed into the cavity of my chicken...

Next time I might add some sauted mushrooms, or lemon zest for a change...
