Home-made double chocolate cookies \\

Ingredients
50 g fine oat flakes
100 g rye flour
100 g whole wheat flour T850
60 g rapadura sugar or unprocessed sugar cane
40 g cocoa powder
125 g butter (I used homemade, purchased at the market )
pinch of salt
1 egg yolk
1 / 2 orange (just squeeze the juice) 1 teaspoon vanilla extract
100 g of chocolate with 70% of cocoa and orange oil

Method
Combine flour, oatmeal, sifted cocoa, sugar and a pinch of salt, add cold butter into pieces and \\\"crumble\\\" until the butter and the flour resemble breadcrumbs. Chop the chocolate in a very tiny pieces to resemble to chocolate drops. Combine the mixture of butter and flour, then add half the orange juice,chocolate cut into pieces, vanilla and egg yolk. Form a soft dough and add the orange juice if necessary to be able to form a relatively soft dough. Roll it into a sausage and cut in tiny pieces or cut shapes as desired. Cookies must be 1 cm thick. Bake in oven for about 15-20 minutes at 180 degrees Celsius.
