  • 1 Homemade GourmetĀ® Cilantro Lime Chicken Salad Mix with beans packet - http://shop.homemadegourmet.com/Cilantro-Lime-Chicken-Salad-Mix_p_387.html
  • 1/3 cup water
  • 11/2 pounds (3 cups) cooked chicken, chopped or shredded (or 2 24 oz cans of chicken)
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice (or juice from 1 large lime)
  • 1 bell pepper, seeded and diced (color of choice)
  • 5-7 cherry tomatoes, quartered
  • 1 cup frozen corn, thawed
  • 11/2 cups crushed corn tortilla chips
  • 2 avocados, diced, optional
  • 1 cup shredded mozzarella cheese, optional
1. Remove packet of beans from mix and put in a microwavable bowl with 1/3 cup of water. Microwave for 11/2 minutes on high; let sit for 2 to 5 minutes until tender; set aside.
2. Combine mix with chicken, olive oil, lime juice, bell pepper, tomatoes, corn, and tortilla chips. Add black beans after they become tender.

3. Stir together; cover and chill for 30 minutes.

4. Serve cold, with optional avocado and shredded mozzarella cheese.

Serves 8



Serving suggestions: Over a bed of lettuce, as a wrap with a tortilla or a lettuce leaf, with fresh fruit or crackers.

Includes black beans! Specially blended spices and black beans combine with chicken and veggies for a fiesta of flavors! Add: water, chicken, olive oil, lime juice, bell pepper, cherry tomatoes, corn, tortilla chips. Serves 8.
