This macaroni cheese bake is my own recipe, I tend to make it whenever I feel like having a treat to myself or when I want to impress family or friends. It is quick to make and requires VERY little effort.
Ingredients
Any type of pasta except Spaghetti and Linguine - as much as you require
1-2 people use 1 1/2 cups
A whole block of mild-mature Chedder Cheese (depending on how cheesy you want it - I like it really cheesey)
300ml Milk - semi-skimmed works best
1 sachet of Chedder Cheese Sauce mix or make your own - see below
25g of butter
100g of plain flour
300ml Milk
Melted grated cheese (this method requires cooking time)
Method
Preheat the oven to 180C/gas mark 4/350F
Blanch the pasta in salted water until just before it\'s totally cooked
While the pasta is blanching grate the block of cheese and put aside.
Mix the milk with the sachet of sauce mix until it is combined, don\'t worry about any lumps that float on top, those will disappear during cooking.
Drain the pasta and let it sit to allow any water to drain away.
Get a baking tray, I use a disposal foil tray and put a layer of cheese on the base, add a layer of pasta then another layer of cheese making sure the pasta is covered, add another layer of pasta and cheese. Once the baking tray is full pour on the cheese sauce and cook in the oven for 30 minutes or until the top has slightly caramelised. Leave to cool slightly before serving as the tray will be hot.
(If you want to make your own cheese sauce melt the butter in a warm pan so the butter doesn\'t burn, it should stay a creamy yellow, then add the flour and mix until it is combined then gradually add the milk to prevent lumps add some of the grated cheese and stir until it has melted and the sauce has slightly thickened.)
