I love this cake, it is my favourite for afternoon tea with a cup of coffee.
175gm S.R flour
pinch ground ginger
pinch ground cardomom
2 TBLS milk
25gm flaked almonds
2 TBLS honey extra
Preheat oven to 180 degrees Celcius
Oil & line an 18cm spring form cake pan
Melt honey, sugar & butter over low heat until butter is JUST melted.
Sift flour & spice
Beat egg together with milk.
Make a well in the flour & pour in butter mixture.
Stir with wooden spoon until mixed, then add egg mix, beat until well combined.
Pour into prepared pan, sprinkle with almonds & bake for 25-30 minutes.
Drizzle cake with extra honey while still hot from the oven.
Serve with a little whipped cream if you like.
