I served these in a toasted flatbread along with a good dollop of hummus ,some sliced tomatoes and a squirt of hot chilli sauce...lush ! :)
Recipe from Rose Elliot\'s \'Vegetarian Express\'
1 aubergine, cut into 1cm slices
1 tbsp toasted sesame oil
1 tbsp balsamic vinegar
1 tbsp clear honey
1 tbsp soy sauce
1 tsp of sesame seeds
1. Mix the oil, vinegar, honey and soy sauce together in a small bowl, then brush the mixture over the slices of aubergine.
2. Place under a pre-heated (hot) grill and cook till they\'re golden brown on one side.
3. Turn over and grill the other side. Just before they\'re done, sprinkle with the sesame seeds and cook for another couple of minutes until roasted.
