For rice i use a rice-cooker. Cook about 20 minutes, then let to cool.
Heat a wok with little vegetable oil and fried the eggs. Whisk gently and then add the rice. Continuous to whisk all together about 2 minutes, season with sea salt then put in a large bowl.
Heat the same wok with vegetable oil and add the meat. Still cook until is brown, then take out. In same wok add vegetable oil, chili, red, yellow pepper and cabbage. Season with salt and pepper. Cook just for a few minutes then take out.
In same wok add 2 tsp soy sauce, 2 tbsp oyster sauce and 1 tbsp rice vinegar. After 1 minutes add the meat and veggies mix. Add spring onion too. Mix all together a few second then add coriander leaf and season with sea salt if is necessary.
Serve fried rice with meat and veggies mix.
