Hummus bi Tahina

Ingredients
1 large tin of chickpeas
1 clove of garlic, crushed
2 tbsp olive oil
Juice of 1 small lemon
2 tbsp tahini (sesame seed paste)
1/2 tsp cummin
1/4 tsp coriander
Salt and pepper to season
Some chilli flakes for decorating (optional)

Method
1. Drain the chickpeas into a sieve and rinse under cold running water.
2. Put the chickpeas and all of the other ingredients into a food processor or high speed blender and blend till quite smooth (you can leave it a bit chunkier if you prefer).
3. Place in a small dish and drizzle with a little olive oil, adding some chill flakes to decorate.

Serve as a dip with pitta breads or use as a spread for sandwiches and wraps.

That's a great recipe. Last time I tried to make hummus I got some bland paste. This time, with this recipe, I got real hummus.
