Ingredients
3 cups Canned Chickpeas (drain the liquid)
Lemon Juice from 1/2 lemon
1 tsp Ground Cumin
pinch Salt
1 cup Tahini (raw sesame seed paste)
50 ml water
extra virgin Olive oil
1 tsp Paprika
1 tsp Baking Soda
Method
Place chickpeas in a deep pot and cover with water. Add the baking soda and cook on maximum until boil and then reduce the heat to a minimum and cook for another 10 minutes while occasionally stirring.
Drain the chickpeas and rinse. Combine the warm chickpeas, lemon juice, cumin, salt, tahini, and water in a food processor, and blend to a creamy purée. add more water if its too thick.
transfer the ready hummus to a plate and make smooth with the back of a spoon. Drizzle with extra virgin olive oil and lemon juice. Sprinkle paprika and serve with warm pita bread.
Suggested Toppings: Fried Mushroom tossed in a pan with a bit of Cumin. Fried Eggplant cubes.
