  • carnaroli rice
  • veg stock: carrot, celery,onion, Rapunzel powder
  • fresh cropped leek
  • Chardonnay wine
  • speck di Sauris
  • gorgonzola cheese
I started heating some vegstock I had in the fridge and with half tbsp of Rapunzel powder and a few ladles of water I could rely on the needed lquid, then it was the turn of a few slices of speck I let become crispy on a veil of oil, I made then in little pieces and let them give their taste to the leek I had finely sliced. I made 8 handfuls of Carnaroli rice become hot and dry stirring it in an empty pan, touching it with the hand to feel it was hot enough for me to add the speck leek mix and immeditely after that half glass of Chardonnay, which evaporated immediatly.
I had a good cube of gorgonzola cheese waiting to be added instead of butter at the end, about 16 mins, but I had not the approval of my guests and did not dare .............but i put a little triangle of gorgonzola in my plate and covered it with two generous ladles of our pink green risotto 29 september 2010.

Try it and you'll tell me how amusing and gratifying it is to discover with your fork where the speck taste melts with that of the hidden cheese.

With what I had in fridge, orto, cellar, kitchen cupboard I wanted to cook a slightly differently tasting risotto

Method
