Impossible pie

This is called Impossible Pie, because you pour the mixture into the pie dish and it magically separates into 3 layers once baked. Easy to make and delicious!

Ingredients
1/2 cup (75g) plain flour

1 cup (220g) caster sugar

3/4 cup (60g) dessicated coconut

4 eggs

1 tsp vanilla extract

125 butter, melted

1/2 cup (40g) flaked almonds

2 cups (500ml) milk

Method
- Preheat oven to 180 degrees celcius (160 fan-forced, although I find that a bit low in my oven so might depend on your oven). Grease deep 24cm pie dish.
- Combine sifted flour, sugar, coconut, eggs, extract, butter and half the nuts in a large bowl.
- Gradually add the milk, stirring, until combined.
- Pour into dish. Bake for 35 minutes. Remove from oven, and sprinkle over remaining almonds. Put back in oven and bake for a further 10 minutes.

Keeps in fridge for 2 days.

firat one too runny - trying again tonight - used sweetened coconut instead of dessicated - maybe that was the problem or oven not hot enough.<br />

Quite clearly not impossible, anything that is impossible by its name is not achievable. It quite an incredible pie but not impossible

Had to put it in the freezer because it wasn't cooling fast enough for us to eat! Absolutely delicious and sooooooo easy. Totally idiot-proof!

This is fabulous! Extraordinary separation of the ingredients into the 3 layers and much enjoyed by the family. I liked the comment 'keeps in the fridge for 2 days' - No chance!
