fry in a nonstick pan with a tiny amount of olive oil or an ordinay with a larger amount
Chopp the tomatoes and cook the with a little olive oil into a fresh sauce add the herbs and the garlic as well as salt&peppar if the color is bleek it´s possible to hot it up with a slosh of tomato pure´
The potatoes are heavanly if you take the small fresh baby ones and divide them into chunky bits and precook before they are roasted in olive oil and salt&peppar
you might add some fres herbs on top before serving the dish
