  • Makes 6 patties
  • 650g minced meat (half pork, half beef)
  • 1/2 cup fresh breadcrumbs
  • 1 small egg, beaten
  • Salt and pepper to season
  • Stuffing:
  • 4 rashers streaky bacon,finely chopped, fried till crispy
  • 1 ball of mozzarella, finely chopped
  • 4 tsps grated parmesan cheese
  • 4 -5 sun-dried tomatoes (in oil) chopped
  • 4 tbsp chopped fresh basil
  • 1 clove garlic, crushed
  • 1 tsp capers, finely chopped
  • Salt and pepper to season
Preheat the grill (to grill topping later). 1. Add the beaten egg and breadcrumbs to the mincemeat and season well with salt and pepper. 2. Mix thoroughly (using your hands) and divide the mixture into 8 portions. 3. Combine the stuffing ingredients, mixing well. 4. Take 1 portion of mince meat and divide into two. Top one half of the patty with approx 3 tsps of stuffing, place the other half on top and squeeze and roll the patty gently into shape, sealing well ( You should have a little stuffing left over) 5. Cook on an oiled, hot griddle pan, over a medium heat,till cooked through (approx 5-6mins per side). Alternatively, you could cook them under a grill/on a barbie. 6. Top the patties with the rest of the stuffing mixture then place under a hot grill for about 1-2 minutes, or until cheese just melts.
