This is a simple italian meringue with chantilly cream and melted chocolate to garnish.
300 G Sugar
1 TBSP Glucose
5 TBSP Water
6 Egg Whites
Step 1/ Sugar,water and glucose in a small pot and boil to 120 degrees celcius.
Step 2/ Whip egg whites to stiff peak.
Step 3/ Slowly add the syrup and whisk very quickly preferably with an electric whisk.
Now pop into a piping bag and bake at 100 degrees celcius till hard any shape you wish garnish with whipped cream.
