Ingredients
4 good sized baking potatoes
mature cheese, grated
1 onion
2 cloves garlic
a good pinch mustard powder
salt & black pepper
Method
Preheat the ovent to 200C. Clean and prick the potatoes. Put them into the oven and bake until cooked through and the skins are crisp. Meanwhile boil the onion and garlic until soft, discard the liquid. Cut a hole in the potato leaving a with a sharp knife and carefully scoop out the potato and put it into a bowl. Then mash the onion, garlic, salt, pepper, mustard into the potato. Put this mixture back into the skins and put the piece of potato you removed back in place. Place the potato back into the oven for 30 minutes. This goes well with a nice salad or a nice piece of white fish.
