  • 3 skinless, boneless chicken breasts cut into chunks
  • 2 onions peeled and chopped
  • 2 apples peeled and chopped into bite size chunks
  • 2 medium potatoes chopped into bite size chunks...use sweet ones if you like your curries sweet
  • 500ml water
  • 1 tbl spoon ground tumeric
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of ground cumin
  • 1 tbl spoon of mango chutney
  • 1 tbl spoon of olive oil
  • 1 tbl spoon of mild curry powder (use medium or hot if so inclinded)
1. add oil to a large pan with the chopped onion, tumeric, cumin and cumin seeds. fry on a medium heat until the onions are soft.

2. add to the pan the peeled chopped apples and potatoes and stir coating them in all the spices.

3.add the chicken and continue frying gently until the chicken has turned white

4.once the chicken is white add the curry powder, water and mango chuntney and stir well.

5.Leave on a med/low heat for 30 mins stirring every now and then to make sure it doesn't stick to the pan

6. once the curry has thickened, serve with rice and a naan bread and enjoy!!!

This recipe was a firm childhood favorite that i have adapted slightly from my mother's original recipe, it really is a good intro to indian food for children, my boys love it....

Method
