Ingredients
Extra virgin olive oil
6 oz Parmesan Cheese, grated
7 oz Fontina, Cheddar or a good melting cheese
5 oz mild Gorgonzola Cheese crumbled
2 Large handfuls of Arugula
1 handful of fresh Marjoram leaves
Salt & pepper
Method
As always, Jamie's recipes are a success. This one is from Happy days with the nacked chef. You should have this book in your collection!
Make your bread and then roll it out to 1/2" thick rectangle. Drape half of it into the pan. Drizzle that part with good 3 glugs of oil and then add your cheeses, arugula, marjoram and seasoning. Using your fingers push into the dough. Gently fold over the hanging piece and tuck it up nicely. Rub the top part of the bread with some more olive oil and rip some thyme or sage on top.
This can be cut up into triangles and wrapped in wax or aluminium paper and put in the freezer to reheat when you need.

I tried this with a good result too. I have one problem though, and I seem to always have this with any Focaccia and whatever oven I use.
The bread is nice on the outside but I always end up with a "wet" "doughy" part in the middle. If backed until gone the outside is then burnt. What am I doing wrong?
I tried this recipe and it is so good. Forgot to season the cheeses with S/P and marjoram but didn't notice it - in fact, you don't need any salt and pepper. Only made half the recipe and it is enough for 4 persons. While putting on the filling, I thought the amount of cheese was too much and used only 2/3. My advice - put it ALL on and double the amount of arugula (unless you have very big hands!). A tip which I got from reading other focaccia recipes - put in a tray/bowl of water into the oven or spray the sides with water, once at the beginning and once half way through. I baked my focaccia for 30 min at 180 degrees C. The recipe for the focaccia bread is Jamie's basic bread recipe which I dumped into the bread machine. It calls for 1000g flour but as I mentioned, I only made half the recipe.
