This is the best jelly slice I have ever had. I made it for friends from Perth who have never had it and I thought it was an Australian institution!!! They loved it. Jelly slice is popular in Melbourne. And although there are several stages to the making of this, it is not difficult. Remember to let each layer set before you do the next layer, and allow the jelly liquid to cool before pouring on top.
Ingredients
Base:
1 Packet Marie Bisuits, crushed (you can subsitute with any plain sweet biscuits)
170g butter melted
Filling:
1 x 400g tin sweetened condensed milk
Juice of 2 lemons
3 level teaspoons gelatine
1/4 cup boiling water
Topping:
1 packet red jelly crystals (you can choose different colour if desired)
Water
Method
- Base: mix crushed bisuits with melted butter. Press firmly into a slab tin. Place in the fridge until cold and set.
- Filling: In a medium bowl, blend condensed milk, juice and gelatine (disssolved in boiling water). Spread over base and refrigerate until set.
- Topping: Make up jelly as directed on packet, cool and pour over slice. Chill until set. Cut into squares to serve.

I have been making this Jelly Slice for 30 years now, everyone Loves it, I sometimes put a tiny less butter in and a squeeze of 2 Lemons in which gives a nice added Tang to it. Enjoy
I make this jelly slice all of the time and my kids love it, so must everyone else as I get requests to make it all the time. One difference is that I add a teaspoon of geletine to the jelly. I like the sound of the black forest jelly slice and I will be trying that next.
jelly slice is sooo easy and everyone loves it thanks for the idea of green and red for x-mas!!! :)
This is yummy done as a "cheesecake" kinda thing, in a pie dish, I put sliced banana and passionfruit pulp under the jelly :0)
Sensational. Just like my granny used to make!
MMMMM! the best jelly slice ever! Thanks Jamie! And thanks Felicita for the great idea of green & red jelly for xmas!
This is SOOOO easy. I did change it a little though. I used half a tin of condensed milk mixed with a tub of Mascarpone and vanilla.

Jelly slice is one of my all time favourites and now I've come up with a slightly different version inspired by a cheesecake receipe I found.
Substitute the plain sweet biscuits for plain chocolate biscuits and use cherry jelly on top and you have...

Thanks so much!! I've had this recipe for over 20 years and I've made it loads of times but was just about to whip one up for work friend's birthday morning tea and couldn't find it. I can't believe it is the exact same recipe!! Cheers from Tassie
Lost the recipe over the years ,now found it, so big thank you ,as I want to make it for my grand daughters birthday party
my family also love jelly slice, I have lost count of the number of jelly slices I have made over the years. my family also love pineapple slice which is made in the same principle as jelly slice with the biscuit base and the condensed milk middle (to which you add crushed pineapple drained of all juice) and topped with whipped cream and toasted coconut instead of jelly. It is absolutely delicious :)
I'm from Canberra and this recipe has been a family Christmas favourite for years - we'd make one with red jelly and one with green jelly and arrange them alternating on a platter to share with friends and family. Since I've moved overseas I no longer have the cookbook it came from, so I'm really glad I found it here! I may make it soon for a Christmas In July - it's the perfect weather for it!
This is the classic jelly slice recipe. Great! Depends which Australian state you come from. VERY big here in Tassie, and I believe Victoria.
I made this to instruction and it came out well.
I found there to be too much biscuit base for my liking, It took over the filling and jelly somewhat. Next time I will make it with 1/2 - 3/4 of a pack of biccies.
BRILL + TASTY! I love jelly, and would like some more jelly recipes! Also, Tegan is my middle name, and my bruv lives in Melbourne! Enjoyed some of these jelly slices in Wales so cool!!!
