Jims Ginger and Chorizo Jam

A sharp spicy and gingery reduction.
2 inch chorizo - halved then sliced
6-8 cherry tomatoes - quartered
5 small mushrooms - finely sliced
8 basil leaves - julienne cut
approx 4 tbsp balsamic vinegar
2 wedges lime
1 inch grated fresh ginger
approx 4 tbsp brown sugar
Heat a pan with a little olive oil and put in the chorizo, tomato and mushrooms in reduce on a low to medium heat for about 5-10 mins occasionally stirring.
Add the basil and the ginger stir and leave for a minute or two.
Add the balsamic vinegar and squeeze the juice of the lime wedges into the pan. Stir in the sugar. Reduce until you get the desired consistency.
Tastes good with salmon and boiled new potatoes
Serve straight out the pan or leave to cool. Not sure how long it keeps in the fridge.
