Kay's Salmon Pudding

Ingredients
1/2 lb - 1 lb salmon or other fish• Can use canned fish.
2 eggs.
1 lb cooked and mashed potatoes.
3 oz butter.
2 oz breadcrumbs.

Method
If using fresh fish, skin and flake after cooking it - grilled, poached etc.
Remove all bones.
Mix with potatoes.
Melt 2 oz butter, beat up eggs and add these to mixture.
Use remaining butter to grease oven dish and put in mixture.
Add breadcrumbs on top.
Bake in medium oven for 30 mins.

Real comfort food.
