In a skillet, med heat, fry bologna until lightly brown. Add bologna and chopped egg whites to rice. Stir in melted butter and season to taste. Return to skillet and heat thoroughly. Serve as a breakfast or lunch dish. Garnish with sliced hard boil egg, egg yolks and parsley. Excellent with homemade bread and a cup of good steeped tea.
