Ingredients
Fillet of salmon with skin
Fennel
Orange
Apple
Spanish onion
Olive oil
Salt
Pepper
Few tbp freshly squeezed lemon juice
Few tbp freshly squeezed orange juice
Method
To make the salad, thinly slice some fennel, and an apple and chuck it in a bowl. Peel and orange and thinly slice as well. Throw them all in a mixing bowl, and toss them around with a splash of olive oil, orange juice and pinch of pepper. Set aside.
Score the fillet of salmon, and rub in salt, pepper and lemon juice. Heat the frying pan, and add a splash of olive oil. Lay the fish skin down, away from you on the hot pan. Cook 3-7 mins depending on the thickness of your fillet. Turn it around, and remove the skin. Lay the skin on the side of the fish, and let it crisp up in the pan, while the other side cooks.
When done, lay the fillet on a plate. Sprinkle the salad around the fish fillet. Wave the crisp skin on the salad, and finish off with some fennel tops and squeeze of lemon juice. Bon apetit ! ;)
