King Prawn Saganaki

A tasty and hearty meal inspired by a traditional greek dish

Ingredients
Chopped tomatoes
Tomato puree
Shallots - chopped
Garlic clove - crushed
Feta cheese - broken up
Raw King Prawns - buttterflied
Olives - chopped or sliced
Dill - chopped
Red wine
Sliced crusty bread
Pinch of sugar & salt

Method
Use a large helping of olive oil on a medium to high heat and fry up the garlic and shallots for a minute or two

Add the chopped tomatoes, tomato puree and red wine, plus the salt and sugar, and reduce down for 5 - 10 mins depending upon volume

Toast 1-2 slices per person of crusty bread and place on a plate

In another pan, boil, steam or fry the raw king prawns for a minute until almost cooked, aand then add to the main sauce

Add the olives and feta and dill, and cook for a further minute

Serve over the toasted bread
