LOVELY SQUID CASSEROLE

Another variety of Veggie cous-cous and fresh Squid with Onions, Garlic & Parsley. Cous-cous with vegetables: I like cooking cous-cous with different types of veggies and spices. You can always invent, try a new way, and the dish changes a lot if you want to. You can try with bigger pieces, more stock, themes (indian, italian etc). The cous-cous is also a great allied when it comes to CARPE what ever you have in your fridge and turn it into a nice meal. Don’t let anybody tell you how you should or shouldn’t do. Get familiar with the little grains, and your menus will have another great dish.

Ingredients
Fresh Squid with Onion, Garlic and Parsley


Squid is one of my favorite from the Fish Store• You use almost all of the squid, it has a nice “round and creamy” flavor to it and you can cook it quickly for a quick meal or you can let it simmer for a longer time in a casserole•

1 kg• of smaller size squids
2 onions
1 bundel of parsley
5 garlic cloves
Salt & Pepper & Sugar
Vinagre of Modena ( this time I didn’t use it but I usaully do)
Slice the onion quite finely• Peel the garlic cloves and chop them finely the parsley should also be finely chopped• Put the onion into a pan and sauté with 1 tea spoon of salt & 1 teaspoon of sugar until the onion is translucent• Rinse the squids and add them to the onion• Add the garlic and the parsley and let it simmer for 20 min• with a lid on• The stock from the squid with the herbs and the onion make a lovely sauce!
