Lamb and red wine vinegar bake

This is a tasty dish for those cold winter nights in front of a fire and a nice glass red. With a bursting flavour throughout the dish i hope you enjoy

Ingredients

500g Choice Lamb Steaks

1 Large Spud

1 Brown Onion

Fresh Mushrooms approx 150g

Oregeno

Basil

Red Wine Vinegar

Cherry tomatoes

Rode kool met appelstukjes(Pickled Red Cabbage)

Parmesian Cheese

Chilli Jelly



Method
Heat oven to 200 Degrees Celsius

thinly slice spud (approx 2-3mm) and lay on bottom of oven dish with olive oil.
Slice onions into rings and lay over spud repeat with mushrooms

Pour some red wine vinegar into a bowl and throw in about 2-3 pinches of basil. Marinade the lamb for 5 minutes in this.

Sprinkle a pinch of oregeno over the Veggies in the baking dish.

Slice the tomatoes in half and layer them into the baking dish

Rub some chilli jelly into the lamb with a teaspoon and then lay into the oven dish.

Bake for approx 20 mins on 200 Degrees Celsius

After 20 mins scatter some grated/ finley slice parmesian cheese over the top of the meat and bake for further 10 mins

Remove and serve with a side of Rode Kool met appelstukjes
