Immediately after spreading the icing, I like to place a candied cherry in the center of each bar and four blanched almonds pointing to each corner to make a star shape.
Ingredients
2/3 cup honey
1/3 cup sugar
1 1/2 tablespoons unsalted butter
1 cup reg flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
pinch of salt
1/2 cup chopped blanched almonds
2 tablespoons chopped candied citron
2 tablespoons chopped candied orange or lemon peel
1 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/8 teaspoon ground ginger
pinch of ground cloves
1 cup flour
Glaze
1 1/4 cups icing sugar
1/4 cup fresh lemon juice
1 teaspoon vanilla
Method
Preheat oven to 350f
Grease a 13x9-inch baking pan lined with foil. Butter foil.
In a large saucepan stir honey, sugar and butter over medium heat until butter is melted.
Remove from heat.
Whisk together the 1 cup of flour along with the baking powder, baking soda and salt and stir into butter mixture.
Stir in the almonds, candied fruits, spices and salt.
Stir in remaining cup of flour.
Press evenly into buttered foil.
Bake for 25 minutes or until golden brown.
Set on rack.
While still warm, cut into bars and spread with glaze.
