Easy lemon cupcakes with tangy frosting.
Ingredients
for the cake batter -
1 cup butter (unsalted)
1 cup sugar (white)
lemon zest (1 lemon)
2 eggs
1-1/4th cup all-purpose flour
1/4th tsp - baking powder
for the frosting -
half cup butter (unsalted)
juice of one lemon
3/4th cup icing sugar
Method
Cream together butter and sugar until the texture is smooth.Grind a whole lemon and add the zest to the butter mixture. Add an egg to the mixture and beat for a minute.
Sift flour and baking soda/powder into the wet mixture. When the batter is ready, pour into your muffin moulds and pop them into the oven for about 12-15 minutes depending on the heat.
When they\'re done and cooled, cream together butter, icing sugar and add juice of a whole lemon and whisk the mixture. Apply generously over the cupcake and put them in the fridge to harden for a couple of minutes. Enjoy!

In response to Erica: the correct is to use two eggs. If you use only one, your cupcakes will come out to dry. If you use two and follow the recipe exactly as described, they will come out just fine!

Is it one egg or two for this recipe? I was half way through when I realized the Method only mentioned one egg but the ingredients listed two :-(
