Light chicken salad dinner Very quick. Very tasty. Enjoy! Preparation time: 5 mins Cooking time : 10 mins ( 20 if doing rice ) Serves 3
600g Chicken Thighs, cut into strips and lightly salted
2 Lemons, juiced
1 Onion, sliced
In a large frying pan cook the onion over a medium heat in the olive oil until soft. Add chicken. Cook until lightly browned. Add lemon juice. Stir. Simmer for 8 minutes or so, stirring occasionally. Add ground pepper to taste.
Toss with rocket and spinach leaves. Serve with rice if you like. Sprinkle a little olive oil over the top and your done,
A little lemon zest can also be added for an extra lemon kick.
