The muscovado sugar produces a nice caramell flavour. Itīs my first muffin recipe I ever tried.
280 g white wheat flour
120 g muscovado sugar
1/4 tsp salt
1 tsp baking soda
280 g plain yoghurt
1 large egg
60 ml vegetable oil (I used rape seed oil)
zest of one lemon
juice of half a lemon
60 g icing sugar
Preheat your oven to 200į C.
Mix flour, sugar, salt, and soda in one bowl.
Mix yoghurt, egg, oil, lemon zest and juice in another bowl.
Stir in the flour mixture bit by bit.
Put some paper cups into the muffin pan and fill in the dough.
Put in the oven for 20-25 min and take out then.
Let the muffins cool down.
Mix the icing sugar and some lemon juice. Put on top of the muffins.
