It is a lovely summer recipe..
Ingredients
250g Mascarpone
250ml cream (whipped cream)
24 italian sponge fingers (savoiardi)
125g white sugar
80ml lemon juice
80ml Limoncello
2 lemons in thin slices to decorate
a square glass bowl.
Method
Mix mascarpone, cream, sugar and half of your lemon juice together with a hand mixer until it\'s light and fluffy.
Mix leftover lemon juice with limoncello.
Put 12 of the sponge fingers on the bottom of your square bowl and sprinkle with half of the lemon juice-limoncello (i normally roll them around in it...but if you dont want your hands to smell like limoncello you could just poos it on the sponge fingers).
Put half of the mascarpon-cream-sugar-lemon juice mixture on top of your spongefingers with limoncello/lemon juice.
Than follow with another layer of sponge fingers and sprinkle them with the leftover limoncello-lemonjuice.
Than another layer of the leftover mascarpone-cream-sugar-lemon juice on top.
Slice your lemons in thin slices and cover the top of your bowl with it.
Put in the fridge for at least one hour.
You can also make it in a (water) glass and make single portions for everyone, you can make around 6 with above mentioned ingredients. Just break your sponge fingers in half to fit them in the glass.
If you have kids you can leave out the limoncello and replace with lemonade.
(i dont actually use above amounts but this was the original recipe from my cooking course.. ;) and i wanted to give you the original recipe i/o mine...as i am like the muppets swedish chef and just poor in whatever and than taste...so never use above mentioned amounts...)
