Very tasty soup that is good for you and full of Iron
Ingredients
1 cup Lentils
498 ml tomatoes crushed or passata
1 tbsp tomatoe paste
3 cups water
2 cloves garlic
1 onion, diced small
3 bay leaves
salt & pepper
Vinegar
Method
In a pot add a few glugs of olive oil and soften the onion & garlic.
Add the water and lentils and allow to boil for about 5 minutes. Now add all the other ingredients with a tbsp of vinegar (to taste)
Cook until lentils are done.
