This is a lovely soup - my kids love it ! Makes a nice big pot full. Serves 8 easily
1 large cooking onion, finely chopped
6 cloves garlic, minced
2 stalks celery, finely sliced
1 zucchini, quartered lengthwise and sliced
1 larger can brown lentils, drained
1 1/2 cups uncooked spaghetti broken into 1 inch lengths
dash of worchestershire sauce
tsp dried parsley
salt and pepper to taste
7 -8 cups chicken stock
Heat oil in soup pot.
Add onion, garlic, and celery - saute 2 minutes.
Add zucchini and continue cooking until softened (another 2 minutes)
Add lentils and spaghetti pieces and mix well.
Add all other ingredients and bring to a boil with lid on.
Once boiling, reduce heat and simmer - sitrring occassionally - until pasta is cooked.
Serve with homemade bread or biscuits.
