Ingredients
500g Green dried Lentils
25g Tomato puree
2 Tbs Olive oil
1-2 Cloves garlic
50g Onions
Bayleaf
2 fresh Tomatoes chopped finely
2 Carrots chopped finely
1 fresh Red pepper chopped finely
1 level Tbs of either a curry mix or moroccan spices
Method
(1) Cover lentils with water and boil for 5 minutes
(2) Drain and add fresh water (covering lentils by 1.5 inches)
(3) Add all ingredients except the olive oil and simmer for approximately 45-60 minutes, stirring occasionally with lid on pot (removing for last 10-15 minutes of cooking)
(4) Once ready add and stir in the olive oil

I did things a little differently. I sauteed pepper, carrot, scallions, celery and some onion in olive oil for about ten minutes. I then added the lentils (already cooked) and some vegetable stock I had made, 2 tbsp of tomato paste, the bay leaf and the curry. After letting simmer, I then pureed half of the soup to give it a thicker stew appearance.
