Little spinach and potato pies.

Mashed potato and spinach in a pastry case, with a savoury topping.
5 medium potatoes, peeled and chopped.
2 cups washed and roughly chopped spinach.
Freshly ground black pepper.
1 egg beaten.
1 cup grated tasty cheese.
Butter and milk for mashing.
Puff pastry, thawed and cut to fit pie plates.
Crispy bacon pieces.
Pecorino cheese, grated.
Tasty cheese, grated.
Fresh basil chopped.
Fresh parsley chopped.
Fresh thyme leaves.
Boil potatoes in salted water until tender to fork, add spinach until wilted and drain.
Mash potato and spinach with a little butter and milk until smooth.
Add a sprinkle of smoked paprika.
Allow to cool slightly and add cheese and beaten egg and combine with a fork.
Grease your little pie plates with a little butter and line with the puff pastry.
Spoon in the potato mix.
Grate over some pecorino and top with slice of tomato and chopped basil leaves.
Top with grated tasty cheese, bacon pieces and chopped parsley.
Top with grated tasty cheese, mushroom slices and thyme leaves.
Bake in a pre-heated oven @ 160 degrees C for 15 - 20 minutes until pastry is puffed and cheese golden brown.
