A more sophisticated version of the traditional caponata ;)
Ingredients
3 onions
1 large aubergine
1 courgette
1/2 green pepper
1/2 red pepper
1/2 yellow pepper
1/2 orange pepper
3 or 4 pimientos de padrón, small green peppers
bay leaves
35g capers
50g raisins
15g cloves
olive oil
salt
freshly ground black pepper
Method
Roughly chop the onions, aubergine, courgette and peppers.
Round slice the small green peppers.
In a large baking dish, put all the chopped ingredients leaving the peppers aside.
Add the drained cappers, raisins and cloves.
Add salt, black pepper to taste.
Drizzle with a generous amount of olive oil, then get the bay leaves on the bottom of the mixture.
Put in a preheated oven at 200°C for 10 min.
Fold the peppers in and get it back in the oven for another 10min.
Serve it warm or at room temperature, or even cold, on the top of a italian bread slice.
