Low Fat Vegetable Chilli

Low Fat Vegetable Chilli : Low fat should be no fat, I didnt fry anything off at all, just kept adding things to the beans as they cooked & dry roasted the spices before grinding. Served with potato mashed with sour cream in this pic but normally I would serve this with rice & a dollop of sour cream.

Ingredients
2 cups red kidney beans ( soaked in water overnight)
4 cups water
1 onion
4 cloves garlic
2 carrots
4 small zucchini
1 green capsicum
2 ears fresh corn
1 400gm diced tomatoes

6 tsp paprika
2 tsp cumin
1 tsp coriander
1 tsp cinnamon
1 tsp hot chilli powder
1 tsp salt
1 tsp pepper

cornflour to thicken

Method
Simmer soaked beans in water for 1 hour in a large pot with a lid.

Grate or very finely chop onion, carrot, garlic, zucchini.

Cut kernals from corn cobs

Cut capsicum into chunky bits

Add all the veg to the pot, give it a good stir.

Add spices ( I toasted the cumin & coriander seed before grinding)

Simmer 1 hour UNCOVERED & thicken with cornflour

use tinned kidney beans instead. it's much quicker than all that soaking.

Raw red kidney beans need to be boiled vigorously for 10 minutes before simmering to remove the toxic phytohaemagglutnin (kidney bean lectin).
