MANGO CHUTNEY

Ingredients
1/2 kg mango, peeled and coarsely chopped
1 cup raisins
1 cup sugar
2 red chillies, seeded and minced
250 gms ginger finely chopped
1 tsp brown sugar

Method
* Mix all ingredients and give the mixture to boiling. Reduce the heat and simmer for about 45 minutes
* Till the mixture thickens.

For this particular recipe you would need to use it fairly quickly. Vinegar or citrus juice are normally used in chutneys because it acts as a natural preservative, to create acidity you can also add a touch of salt. Following these methods will help the fermentating process.
