4 mackarel fillets
100g cherry tomatoes, halved
50g pitted black olives
half a courgette, cut into 1-2cm pieces
2 tbsp olive oil, plus extra for brushing
1 tbsp roughly chopped basil
salt and black pepper
1. Brush the mackarel fillets on both sides with olive oil. Season with salt and pepper and grill for 2-3 minutes each side, until cooked through.
2. Heat the 2 tbsp olive oil in a pan. Add the courgette and cook for 2-3 minutes. Add the tomatoes and olives and cook for another minute or so. Add the chopped basil and season with salt and pepper.
3. Serve 2 mackarel fillets each, on top of the vegetables.
