Mackerel Fillets with Celeriac Remoulade(serves 2)

Ingredients
2 mackerel fillets
flour, seasoned with salt and
pepper
1 tbsp olive oil
knob of butter
half a head of celeriac, peeled and
grated
juice of half a lemon
1 tsp Dijon mustard
3 tbsp mayonnaise
1 tsp parsley, finely chopped
salt and black pepper

Method
1.In a bowl, combine the celeriac, lemon juice, mustard, mayonnaise, parsley and seasoning. Mix well.
2.Heat a frying pan over a medium-high heat and add the olive oil and butter. Dip the mackerel fillets in the seasoned flour, shaking off any excess, and place skin side down in the pan. Fry until the fish are three quarters of the way cooked through and then turn over and fry until cooked through.
3.To serve, place the celeriac remoulade of in the middle of a plate and place a mackerel fillet on top.
