  • 2 mackerel fillets
  • flour, seasoned with salt and
  • pepper
  • 1 tbsp olive oil
  • knob of butter
  • half a head of celeriac, peeled and
  • grated
  • juice of half a lemon
  • 1 tsp Dijon mustard
  • 3 tbsp mayonnaise
  • 1 tsp parsley, finely chopped
  • salt and black pepper
1.In a bowl, combine the celeriac, lemon juice, mustard, mayonnaise, parsley and seasoning. Mix well. 2.Heat a frying pan over a medium-high heat and add the olive oil and butter. Dip the mackerel fillets in the seasoned flour, shaking off any excess, and place skin side down in the pan. Fry until the fish are three quarters of the way cooked through and then turn over and fry until cooked through. 3.To serve, place the celeriac remoulade of in the middle of a plate and place a mackerel fillet on top.

Method

Dip the mackerel fillets in the seasoned flour, shaking off any excess, and place skin side down in the pan. Fry until the fish are three quarters of the way cooked through and then turn over and fry until cooked through. 3.To serve, place the celeriac remoulade of in the middle of a plate and place a mackerel fillet on top.
