Maltese omlette

Cooking a delicious meal doesn’t have to be complicated. It may be just a matter of choosing some quick to process ingredients and for that eggs are my all time favourite. I’ve just came home after hanging out at my friend’s house over the weekend and was very keen to cook something just for myself, in my own way and not being told off for that. Seeing eggs and some Gozo cheese, that have been in the fridge for quite some time now, I thought this may be an interesting combination, although I’ve never heard of having this cheese hot. Being made out of sheep’s whole milk this cheese has a semi hard texture and a mild taste. The one I used is stored in a mixture of brine and vinegar and coved in black pepper that increases its exotic taste. I love this little shopping adventures at different destinations when you can experience the new and unknown flavours, buying things you have no idea how to use and just experiment with them. It may not be the way the locals would use it no one there is only one way of doing things. Maybe you are going to discover something amazing that no one else thought of because they were too attached to doing things in a certain way, the way they were told is the right way. Remember that the greatest inventors came up with ideas and solutions because they didn’t know that it is impossible to do it and that way did something everyone else thought is impossible. It’s ok to not know and it’s ok to do things your own way, even if it’s not the commonly approved way.

Ingredients
3 eggs
6 slices of Salami Neapoli
half a ripe tomato
half of peppered Gozo cheese
olive oli

Method
To prepare the omelette simply fry the salami on a little bit of olive oil. Pour the whisked eggs onto the salami and arrange tomato and Gozo cheese slices on top. Fry on low heat until just set and enjoy.

You may be annoyed that there was so much rumbling going on before me writing the very three lines that are actually to the point and you have a right to be. But isn’t it the whole process of preparation and discovery, before actually doing something, the most rewarding?
