  • 2 cups (260 grams) all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 ½ cup (300 grams) sugar
  • 3 eggs, well beaten
  • ½ cup (113 grams) butter, melted
  • ½ cup (125 ml) vegetable oil
  • 2 cups ripe mangos, mashed (Keep mash a bit on the chunky side for texture)
  • 1 teaspoon vanilla extract
  • ½ cup (64 grams) walnuts, chopped
1. Preheat oven to 350 degrees F (180 degrees C)
2. Grease 2 loaf pans and lightly dust with flour
3. In a large bowl, sift together flour, baking soda, salt and cinnamon
4. Add all other ingredients and mix: sugar, beaten eggs, melted butter, vegetable oil, mashed mangos, walnuts and vanilla extract
5. Pour batter into each pan until ¾ full and let stand for 20 min
6. Bake for 45-55 minutes or until a toothpick inserted in the center of cake comes out clean.

In Hawaii, we had a mango tree in our backyard. During mango season, there would be loads of ripe fruit. I remember my mom picking the mangos, cutting up the fruit and freezing it so we always had ripe mangos. She would also give some away to our neighbors and friends and, in return we’d get whatever fruits they had too much of like guavas or Hawaiian mountain apples.



One of my favorite things to make with ripe mangos is this cake bread. It’s like banana bread, but with mangos! It’s sweet and moist from the mangos and so ‘Ono’ (delicious in Hawaiian).



The recipe makes 2 loaves and tastes great served warm or cold. I usually can’t wait to eat it, so I cut into one when it’s still warm and then let the other one cool for later.

Method


1. Preheat oven to 350 degrees F (180 degrees C)
