This is a truly lovely variation on the traditional tomato salsa & goes great with fish (tuna & swordfish works well) or chicken. And I really must make a point of making this more often!!!
This salsa can be made in about 5 minutes and really couldn't be easier. Simply put all the chopped ingredients into a bowl, give it a quick stir around and pop it into the fridge until ready to serve... Simples :-)
