This is a truly lovely variation on the traditional tomato salsa & goes great with fish (tuna & swordfish works well) or chicken. And I really must make a point of making this more often!!!
Ingredients
Mango - 1 peeled & diced
Spring Onions - 4 finely chopped
Cucumber - About a 2 inch chunk, diced
Ginger - About an 1 inch piece, finely chopped
Coriander - A good handfull, chopped
Chilli - ½ red chilli, chopped & de-seeded
Lime juice - Juice of 1 lime
Method
This salsa can be made in about 5 minutes and really couldn\'t be easier. Simply put all the chopped ingredients into a bowl, give it a quick stir around and pop it into the fridge until ready to serve... Simples :-)
