Mango and Halloumi Salad with Lambs Lettuce

An ultra quick, easily prepared lunch or starter that will have your family, or guests impressed.

Ingredients
• 500g Halloumi
• 2 Mangoes, peeled and sliced
• 1 bag Lambs Lettuce (or similar)
• Handful roasted pine nuts
• Olive oil
• White wine vinegar
• Salt
• Pepper
• Sprig of chopped mint
Serves 4

Method
Instructions
1. Slice the halloumi and place in an oven proof dish. Place the dish under a hot grill until the cheese begins to bubble and slightly browns. Turn over and lightly grill the other side.
2. Meanwhile prepare the mango on the plates dressed with liberal helpings of salad. Mix a light dressing with 3 tbsp olive oil, 2 tbsp white wine vinegar, salt and pepper.
3. Take the halloumi from under the grill and lay on the plates alternating with the fresh mango. Sprinkle with the pine nuts, chopped mint and drizzle the dressing over the top. Serve immediately with crusty bread

Mint also has anti bacterial and anti fungus properties, may help to relieve colds, headaches and congestion, is an excellent cleanser for the blood and of course, is an antidote for bad breath! Amazing.
