Maple pork with rice and black beans

A sweet and savoury tender pork served with rice and black beans

Ingredients
2 lb pork loin - trimmed

Marinade
maple syrup 1/2 cup
olive oil 1/2 cup
Juice from 1 lemon
1/2 cup chopped cilantro
1 tsp fresh ground pepper
1 tsp cumin
4 gloves garlic - minced

4 cups vegetable stock
2 cups rice uncooked
1 cup black bean drained
1 onion - diced
2 stalks celery diced
1 red pepper diced
2 bay leaves
salt pepper

Method
Trim the pork loin - leaving some of the fat
Mix all marinade ingredients in a platic bag and place loin in marinade, refrigerator for 2 - 3 hours.
Place marinated pork on roasting rack and place in 400 degree oven for 1.5 hours. Remove from oven and allow to rest for 15 minutes before carving.

For rice
Add 1 tbsp olive oil into pan, add diced onion, diced celery and diced red pepper sautee gently until tender. Add rice, bay leaves and vegetable stock - cover and cook on low heat for 15 minutes. Add black beans and gently stir into rice, continue cooking until rice is tender.

Sauce

Place remaining marinade in saucepan and reduce by half

Plating
recipes serves 4 ppl
Place a serving of rice and beans on the plate. Slice the pork place sliced pork onto the rice and pour some of the remaining marinade over pork.
