2 balls of mozzarella
extra virgin olive oil, to drizzle
1 tsp thyme
juice of half a lemon
few basil leaves, roughly torn
salt and black pepper
1. Slice the mozzarella balls into about 5 slices each.
2. Drizzle extra virgin olive oil into the bottom of a shallow dish so that the bottom is just covered with oil. Sprinkle over the thyme and then lay the mozzarella slices into the dish. Scatter the basil leaves over the cheese and then drizzle over some more oil. Pour over the lemon juice and then season with salt and pepper. Cover the dish and leave to marinate in the fridge for about an hour. Serve.
