A fresh and delicious desert with cheese and fruits (strawberry), that is quick and easy to make...
Ingredients
100 g your favourite biscuits
50 g unsalted butter
250 g mascarpone
150 ml whipped cream
250 g fresh strawberries
2 tbsp almond flakes
cognac
1 vanilla pod, halved lenghtway and seeds scraped out
2 tbsp icing sugar
for topping:
1/2 cup water
1/2 cup sugar
1 cup strawberries, finely chopped
Method
Put the biscuits and butter in blender. Pulse a few time, until is combine, then set in 4 glasses, presing down well. Let to rest in fridge.
In a large bowl mix mascarpone, strawberiies, almond flakes and cognac.
In second large bowl, beat whipped cream with vanilla seeds and sugar.
Combine mascarpone mixture with whipped cream.
Spoon on top of the biscuits bases and let to rest on fridge.
For topping: heat a pot and add water and sugar. It begins to boil, add strawbberies. Mix well until it becomes thick. Let to cool.
Serve mascarpone an strawbberies cake with topping and a few almond flakes.
