There are so many variations one can use but the idea is a quick but hearty lunch or dinner which is delicious and nutritious and so easy to do.
Once you have added your pasta to boll, start by chopping your Roma Tomatoes into cubes, not too big, and throw them into some hot oil, using a wok is best. The amount of oil you use is dependent on your tastes and requirements, I don't skimp on oil.
Salt your tomatoes, again to taste and stir fry until they start to liquify. Fresh pepper is optional
note: Roma skins are very ediible, and almost disiintegrate into the sauce so no need to remove.
Now add your basics of garlic and plenty of fresh basil and parley and some red pepper and anchovies. Thyme is also a standard Italian ingrediant but I like the taste of Basil..:)
Also add your Honey and Balsamic Vinegar, both add a rich taste and a little sweetness and help cut the acidity of the tomatoes.
The dish with the above ingrediants is great and simple but feel free to add whatever meats, chicken or fish you want.
Once your pasta is el dente, throw it in with the sauce, stir fry for a miniute or so and you have a pasta feast worth serving to your best friends.
