This recipe has become a favourite with my 2 children. I use my homemade pasta sauce that contains loads of veggies the kids cant see as I blend it before bottling. I usually serve this with cheesey garlic bread.
Ingredients
Soup
750ml chicken stock
750ml tomato pasta sauce
1/2 cup dried red kidney beans
1/2 cup dried borlotti beans
1 cup small soup pasta•
basil leaves, finely shredded
Meatballs
500gm minced beef
2 cloves garlic, chopped
1 egg
1 cup breadcrumbs
basil leaves, finely shredded
salt
pepper
Method
Soak beans in water overnight.
In a soup pot simmer beans in 3 cups of water, covered, for 1 hour.
While beans are cooking make meatballs by mixing meatball ingredients together & shaping them with wet hands into walnut sized balls and cook in frypan with a tiny amount of oil until browned all over. Set aside on a plate lined with kitchen paper until soup is ready.
Add chicken stock & pasta sauce to pot with beans. Once simmering add soup pasta & stir well. Once this comes back to the simmer add the meatballs in too.
Simmer 10 minutes, stirring occasionally, add basil just before serving.
